Ingredients:
16 ounces egg whites
1 whole egg
½ pound ground sausage, cooked
½ cup shredded mozzarella cheese
½ cup whole milk cottage cheese
¼ cup crumbled feta cheese
¼ cup red pepper, finely diced
¼ cup spinach, finely chopped
Salt and pepper
Directions:
- Preheat the oven to 350ºF.
- Place a 12-cup silicone muffin tray on a baking sheet and generously coat with non-stick spray.
- Divide red pepper & spinach evenly among cups.
- Add about 1 tablespoon sausage to each.
- In a blender, combine the egg, egg whites, mozzarella cheese, cottage cheese, and feta cheese.
- Blend until smooth and bubbly.
- Pour mixture into each cup, filling to the top.
- Season with salt & pepper. Gently stir with a toothpick.
- Pour boiling water into the baking sheet until it reaches halfway up the muffin cups to create a hot water bath.
- Bake for 30-35 minutes until the tops are firm to touch.
- Cool for about 5 minutes before removing from the mold.
Variations:
- Substitute sausage with ground beef, ground turkey, Canadian bacon, cubed ham, deli meat, or bacon crumbles.
- Swap cottage cheese for ricotta cheese.
- Add diced jalapeño peppers or red pepper flakes for a little heat.
- Add fresh herbs like dill, parsley, or cilantro.
- For leaner option, omit the whole egg and/or the sausage.
