Ingredients:
1 pound ground beef
1/2 cup chopped green pepper
1/2 cup chopped onion
1 package taco seasoning
1 can black beans, rinsed and drained
8 ounces Monterey Jack & Colby cheese, shredded
4 ounces Cheddar cheese, shredded
1 can diced tomatoes w/green chilies
1 can refried beans
6 flour tortillas
2/3 cup water

Directions:
- Preheat oven to 350 degrees.
- Cook beef, green pepper, and onion over medium heat until meat is no longer pink. Drain.
- Add water and taco seasoning.
- Bring to a boil. Reduce heat and simmer for 2 minutes.
- Add black beans and tomatoes to beef mixture.
- Stir and Simmer for 10 minutes.
- Place 2 tortillas in a greased 13×9 baking dish.
- Spread half of the refried beans onto the tortillas.
- Add half of the beef mixture and top with 1 cup cheese.
- Repeat layer.
- Top with remaining tortillas and cheese.
- Cover and bake for 25-30 minutes or until cheese is melted.
- Garnish with diced tomatoes and green onion.
- Serve with sour cream.
